Preheat the oven to 245 degrees C. In a bowl, mix breadcrumbs, pepper, salt to taste and cheese. Place egg whites in a separate bowl. Slice the zucchini.
First dip the zucchini in the protein and then roll in the dry mix.
Put on a slightly greased baking sheet. Bake for 5 minutes in a preheated oven, then turn over and bake for another 5 minutes, until browned and crispy.
