1 . Stage
Prepare the ingredients for the salad and its dressing. Wash and peel everything. Chop parsley greens, chop walnuts finely.

Mix vegetable oil, wine vinegar, honey, curry, a little salt and pepper.

Peel carrots and cut with a vegetable peeler into long strips. Pour over half the dressing and stir to combine.

Break the pomelo into slices and remove the white film. Divide into slices. Collect the juice. Peel and slice the avocado and sprinkle with pomelo juice so it does not darken. Combine the carrots, pomelo and avocado slices in a bowl.

Gently mix the salad. Pour over the second half of the dressing.

Place the salad as a pile on a plate. Sprinkle with finely chopped parsley and chopped walnuts. Bon appetit!
