Roll out the dough a little and cut circles in equal amounts. In the middle of the circles, cut out any figure in the center.

Cover with cut circles and secure the edges with a fork. Make puffs of any shape from the remaining dough.
Lay the puffs on a baking sheet covered with parchment. Whisk the yolk with water and grease the puffs on top, then sprinkle a little sugar.
