Cut the meat into small pieces and season to taste.
Put the meat in jars on top, distribute the finely chopped lard, add peppercorns and bay leaf. Cover the jars with rubberless lids and place in a cold oven for 3 hours at 180 degrees.
Pull the stew from the oven and immediately roll up with new pre-boiled lids. Turn and cover. The stew in the oven is ready.
