Pepper chicken and salt to taste, pour juice from lemon. Leave to marinate for 30 minutes. Cook meat in a double boiler for 25 minutes. You can also cook over a pan of water in satiety by covering with a lid over medium heat.
Mix soy sauce, balsamic vinegar, garlic, sugar, chicken stock and pepper to taste in a bowl.
Pour the sauce into a frying pan and simmer until cooked to a syrup. Put the chicken breasts in the syrup with the skin down, but if you do not like the skin, remove it at the very beginning. Warm the meat on both sides for about 2 minutes, turn off the heat and let the breasts lie down before serving in the pan for several minutes.
Cut into slices and serve.
