Fry the shrimp in a little oil. Put on a plate.
On the same fire, fry the onion until translucent
Return the shrimp to the pan, add the squid fins and tentacles, eggs, cheese and parsley. Salt and pepper, mix thoroughly.
Start with this mixture of squid and fix with a toothpick.
Roll in flour and fry in butter.
Prepare the sauce in the same pan: fry the onions in oil, then pour the wine, wait until it evaporates a little and put the chopped tomatoes. Simmer for about 10 minutes. Salt and pepper and add water to the sauce and leave to simmer for 30 minutes.
5 minutes before the end of cooking, put the stuffed squids in the sauce, allow time to warm up and serve.
