First, prepare the marinade. Mix olive oil, vinegar, soy sauce and a pinch of salt in a jar with a lid. Shake well.
Rinse the zucchini and cut into very thin circles, it is better to cut it on a special shredder.
Place the zucchini in a bag, add chopped herbs, garlic, salt and our dressing, passed through a press. Close the bag and mix well. Leave for a few minutes to marinate.
After 3 minutes, place the zucchini on a plate and serve.
