Preheat the oven to 170 degrees. In a small bowl, combine olive oil, garlic, rosemary, basil, Italian seasonings, black pepper and salt. Set aside.
Wash the turkey inside and out, dry. Spread well on all sides and inside the turkey with the prepared mixture of spices.
Place the turkey in the roasting pan. Add about half a glass of water to the bottom of the pan. Cook for 4 hours periodically turning over.
