Remove all bones from the salmon and remove the skin, cut into slices of about 2 cm. Add salt to taste and leave for 20 minutes.
Beat eggs, add a little salt. Dip the fish in an egg, then roll in mashed potatoes on all sides.
Sauté the salmon on low heat on all sides until rosy in vegetable oil.
Serve warm with any side dish or as a snack.
