The meat is mainly pulp and a little on the bone. Cut the pulp into small pieces.

Bring the water to a boil and lower the whole onion. When the water boils well, add the meat and cook removing the foam for 40 minutes.

Peel and cut the potatoes into cubes, then add to the meat, salt and pepper to taste, add the bay leaf and cook until the potatoes are ready.

Finely chop all the greens. Remove the finished soup from the heat and add the greens, mix and let it brew before serving for 15 minutes.
