Rinse the pork ribs without cutting them, with cold water. Put in a saucepan, add a peeled whole onion, peeled carrots, 3 stalks of celery or a bunch of parsley stalks, bay leaf. Pour the water. Put on the fire, bring to a boil, remove the foam, reduce the fire to medium, add salt and pepper and cook, covered with a lid, at a gentle boil for 30 minutes.

Remove the ribs from the broth. The broth can be used to make soup. Cool the ribs slightly and cut between the bones into portions. At this point, you can stop the cooking process, put the cooked ribs in a suitable container and put them in the refrigerator until X hour. I do this at home and go to the cottage.

At just the right moment, prepare the caramel for the ribs. The Worcester sauce can be left out, for those who like it particularly spicy. You can also cook without garlic if you don't like it. The main thing is honey, tomato ketchup, and soy sauce.

Pour vegetable oil into a frying pan. Pour the ribs in the heated oil, pour the caramel mixture over them, fry the ribs on high heat, turning them so that the caramel covers all the ribs. When a little caramel remains in the pan, remove from the fire. Cool a little, put it on a plate and serve.
