How to cook deliciously - Pork filet mignon with spicy pears
1 . Stage
Mix the ingredients for the marinade. Salt to your taste. Pour the marinade over the meat, cover with cling film and leave for 12 hours in a cool place.

Peel and chop or grate onions for mashed potatoes.

In a heavy-bottomed saucepan, fry the onions in butter until transparent, sprinkling them with sugar and salt. Mashed potato the onions into a purée. Keep warm.

Cut the pears in half and use a noisette to remove the core. Place in a heat-proof bag or sleeve, add the sugar, balsamic, ground ginger and pepper. Bubble out of the bag, place in boiling water, cover with a small lid or other grip. Cook for 8 minutes until soft.

Take the meat out of the marinade, dry it. Collect the marinade in a small saucepan, boil it slightly. Keep warm.
6 . Stage
Heat the oven to 180 C. Roast the meat in butter on all sides. Place it in the form, bake for 20 minutes.

Pour some sauce into plates, put sliced meat, pears and mashed onions.
