1 . Stage
Italian green peppers (another kind of pepper will have a completely different flavor).
2 . Stage
Cut peppers in julienne and onions in half rings.

Cut the potatoes in half rings.
4 . Stage
Fry all the vegetables together on high heat. WARNING: don't salt or stir often so that the potatoes don't fall apart!
5 . Stage
When the potatoes are slightly browned, turn down the heat and cover.
6 . Stage
After 5-7 minutes, salt and pepper to taste, stir gently and leave under the lid for another 5 minutes until tender.
7 . Stage
Serve with scrambled eggs.
