Peel and chop the pistachios to flour in a coffee grinder.
Beat the egg with sugar until smooth.
1 tbsp. warm the cream a little and pour in a thin stream to the egg with sugar without stopping whipping. Whip the rest of the cream into a thick foam.
Add crushed pistachios, finely chopped mint and whipped cream to the egg mixture. If you have cream of lower fat content then use a thickener for cream to get the desired consistency.
Transfer the finished mass to the ice cream maker and cook until thickened or just in the usual form and put in the freezer for 3-4 hours, periodically stir to prevent ice crystals.
Pistachio ice cream with cream is very tasty and aromatic, such ice cream has a very delicate creamy taste, it is great for the whole family, as well as the completion of any holiday feast.
