Remove the seeds from the pears and cut them into small pieces, put them in a saucepan, add a few tablespoons of water and start heating, when the water boils, reduce the heat to a minimum, cover and cook the pears until soft. Cooking time depends on the variety of pears.
Pear in a blender directly in a saucepan into a homogeneous mass. Add sugar and citric acid. Bring to a boil while stirring constantly and cook for about 3 minutes.
Transfer mashed potatoes to sterile jars and roll up.
