Wash the peaches well and remove the hairiness with a sponge, so we will be sure that our rolling will not wander over time. Then cut in half and remove the stone.
Fold the peaches in a sterile jar.
Pour the peaches with boiling water, cover and leave for 15 minutes.
Pour water from peaches into a saucepan, add sugar and lemon juice, boil and pour peaches in syrup.
Roll up, cover with a blanket until it cools completely.
