Rinse the chickpeas well under running water. Cover with water, add salt, peeled onions and 1 clove of garlic. Cook until the chickpeas are done. Refrigerate the chickpeas in the cooking liquid.
Fold the chickpeas into a blender, add 0.5 tbsp. the liquid in which it was boiled, tahini, olive oil, lemon juice, leftover garlic and salt if necessary. Whisk until smooth and fluffy.
Garnish the finished hummus with parsley and pour a little more oil on top and serve. Bon Appetit!!!
