Rinse the mussels well under running water with a brush, if there are open shells they need to be thrown away as they are spoiled and dangerous to health.
Finely chop the onion and fry until soft in a small amount of oil. Then pour the wine and add all the spices along with chopped garlic, let it boil for a minute.
Add the mussels to the pan, cover and cook for about 3 minutes, during which time shake the pan several times to completely cover the mussels with spices.
Pull the mussels into a separate plate, and add butter, salt and pepper to a pan with juice to taste, cook for 5 minutes until the liquid evaporates and the sauce thickens.
Sprinkle the mussels with chopped herbs and pour over the cooked sauce on top, mix and serve.
