Meringues with jam

1 . Stage

Pour sugar into the egg whites.

Place on a water bath. Heat the mixture at a gentle simmer, stirring constantly until it is warm (40-45 C) and the sugar has completely dissolved.

Pour the juice of the lemon into the warmed mixture. Whisk until peaked. Add the starch and stir.

Transfer the egg whites to a piping bag. Use the nozzle to form the meringues. Place the meringues on a baking tray lined with baking paper.

Bake in the oven at 90 C with the door ajar for 1 hour. Remove, then let cool.

Now prepare the buttercream, because the meringue will not get soggy under it. Add the powdered sugar and vanilla to the softened butter.

Then lay out the jam. I took lemon jam packed in a tube. It's very convenient to squeeze the jam onto the cake.
