Finely chop the mushrooms and onions and fry in vegetable oil until the liquid evaporates, then season to taste and add sour cream, mix well and cook for another minute.
Soak the bread in milk, then squeeze and add to the forcemeat. Also, add the egg and finely chopped parsley, salt and pepper to taste, mix well. Make the balls of medium size from the prepared meat.
Roll the meat balls in breadcrumbs. Using a small glass, make a recess and sides. Fill each nest with mushroom filling.
Using a spatula, carefully transfer the nests onto a baking sheet covered with parchment. Bake at 180 degrees 30 minutes.
Sprinkle the nests on top with grated cheese on a fine grater and bake for another 25 minutes.
Garnish as desired and serve.
