Mash cottage cheese in a blender with sugar and eggs. Add some salt as well. A homogeneous creamy mass should be obtained.
Add semolina, mix. You can make dumplings with flour only, but semolina makes the texture more tender and less viscous.
Add flour, mix again. The dough should be such that it can be made into a sausage, but only on a well-floured surface. If you go too far with flour, then the dumplings will be too dense.
On a floured surface, make a sausage 4-5 cm thick in diameter and cut small pieces from it.
Put the resulting dumplings on a board sprinkled with flour so that they do not stick together. In this state, they can be frozen, and then put in a bag for the future.
Boil water in a large saucepan and lower the dumplings in small portions. When they come up, they can be taken out and laid out on plates.
Serve with sour cream or butter.
