Bring the milk almost to a boil but so that no bubbles appear. Then remove from heat and beat with a mixer at the highest speed until a thick foam appears. Foam will hold for about half an hour.
Pour boiling water over coffee, add sugar and stir until dissolved.
Pour milk in 2 cups and spread the foam. I have one glass without foam.
Then, gently pour a thin stream of coffee from the side of the glass. In a glass where there was no foam, milk simply mixed with coffee, and where it turned out very nicely in layers.
The latte macchiato is ready, sprinkle with cinnamon and serve.
