1. Stage

In a medium bowl, beat mayonnaise, green onions, eggs, and mustard until smooth. Add corn, minced crab and jalapenos. Season with salt and pepper to taste. Add the breadcrumbs to keep the minced meat in shape. Shape the patties with your hands.

Heat oil in a large cast iron skillet over medium-high heat, transfer the crab patties and saute until golden brown on both sides, about 4 minutes on each side.

Serve with sour cream.
