Wash the pears and cut into 6 parts, fill with water and put on a fire, cook until soft. Water can be replaced with white wine. Soak gelatin in water.
Grind the pear in mashed potatoes and grind through the raw to remove excess. Add sugar to taste, the amount will depend on the sweetness of the fruit. Simmer for 5 minutes.
Add pre-soaked gelatin to the hot puree. Stir until it is completely dissolved and pour the resulting mass into a mold covered with parchment. Give that would completely freeze.
Sprinkle sugar on the work surface, then put jelly on it and sprinkle sugar on it too.
Use a knife or cookie cutter to cut out the sweets. Roll in a little more sugar and let stand a little in a cold place.
