Boil beets, peel and cut into medium pieces. Soak gelatin in water.
Beetroot with mayonnaise in a blender, add coriander, a little salt of sugar and juice from lemon, whisk again. Try it for taste, you may need to add something. Mashed potatoes should turn out sour-sweet. Dissolve gelatin in a water bath and add in mashed potatoes, whisk again. A homogeneous, gentle mass should be obtained.
Cut the bread into circles using a glass or a special shape.
Peel herring and remove all bones, cut into small cubes and lay out a slide in the center of the bread.
