1 . Stage
Wash the zucchini, cut off the top and tip. Cut a large fruit in half. If the zucchini is old, remove the skin and remove the central part. Grate on a coarse grater, put in a colander, sprinkle with salt and mix thoroughly. Salt should be taken at the rate of: 1 tsp. per 450 grams of pulp. Leave it for 5 minutes so that the zucchini starts to sap. In this way we get rid of excessive moisture.

Squeeze some of the zucchini and taste for saltiness. If necessary, rinse under cold water. Squeeze thoroughly and dry on a towel (more conveniently, on paper towels). The resulting juice can be used in vegetable soups, sauces.

Peel and finely chop the onion and garlic.

Fry the onion in olive oil over medium heat for 30 seconds, add the garlic and cook for another 30 seconds.

Increase the heat a little, add zucchini and cook for 5 minutes with constant stirring. Sprinkle chopped green onions on the ready dish.
