Thinly chop the ginger and sprinkle with lime juice.
Heat water in a pan and cook ginger slices over low heat for about 5 minutes, turn off the heat, close the lid. Leave on for 30 minutes.
Strain the liquid through a good filter, then return it to the pan, add sugar and cook over medium heat until the sugar dissolves. Refrigerate and refrigerate until consumed.
Pour the syrup with sparkling water and ice and serve with lime slices and mint leaves.
