The most important thing is to take hard potatoes, which do not fall apart! Potatoes are well washed, boiled, drain the water. Pour cold water, so it is easier to remove the skin from potatoes, let stand for a while. Peel potatoes. You can also fry this dish with raw potatoes, but it will take longer to fry them.

Take a cast-iron frying pan, but if you don't have one, a non-stick pan will do, the bigger the better. Turn on the fire, let the fat melt a little. The choice of fat is very important for frying potatoes (pork fat is best)! It must be of good quality, it is better not to take sunflower oil. There should be a lot of fat, but not so that the potatoes float in it!

Cut peeled potatoes in circles, add them to the fat. There should not be a lot of potatoes (no more than 2 servings), otherwise it will turn out wrong! If there are a lot of potatoes, it is better to fry in two pans!
4 . Stage
Peel the onion, not too finely chop, add to the potatoes. Do not hurry to turn the potatoes, let a small crust form. The onion should also be browned. Turn over and fry until almost cooked.
5 . Stage
Add the finely chopped bacon 2-3 minutes before the end. Season with salt and pepper!
6 . Stage
Place the potatoes on a plate. In the same pan, fry an egg. Serve the potatoes with the egg, pickles are perfect!
