In a medium bowl, mix sour cream, cream and pudding, whisk a little.
Cut the cake horizontally. Peel and chop the fruit.
Place one layer of cake in the bottom of the glass bowl, on top 1/3 of the bananas and pineapples, and 1/3 of sour cream. Repeat layering until all ingredients are used.
Garnish with strawberries and a sprig of mint. Chill until serving.
