1 . Stage
Prepare the dough: thoroughly mix the sifted flour with the grated cottage cheese.

Add vegetable margarine, egg whites, cinnamon, sesame flour, vanilla sugar, and a pinch of salt to the batter. You can add sugar, but this is optional.

Knead the dough well until homogeneous. I kneaded first with a spoon, and then I crushed the dough with my fists. The dough does not stick to your hands like plasticine, it is soft, very good to knead.

Then roll out the dough, 0.5-0.7 cm thick, and cut into squares. I got 12 squares.

Pinch the ends of the squares together so that you have neat envelopes. Place fruit envelopes on a baking tray lined with baking paper and greased with vegetable oil. Brush each envelope on top with whipped egg yolk mixed with 1 tbsp of milk.

Bake the envelopes in a preheated 190 C oven for 20 minutes. Place the baked apricot kooks in a vase and serve with tea or coffee.
