Cut the boiled eggs in half along, remove the yolks. Beat the raw egg well with a fork of salt. Roll each half of the protein in flour, then in a beaten egg and in breadcrumbs.
Heat the oil well and fry the proteins breaded until golden brown.
In a separate bowl, mix egg yolks, chopped tuna, mayonnaise, salt and pepper to taste. Mix well.
Fill each egg with the cooked mass, decorate with greens and serve.
