Preheat the oven to 175 degrees. Pass the garlic through a press and mix with salt, paprika, pepper and rosemary. Cut the meat in several places, stuff the halves of the garlic into the holes and grate all the meat with the prepared mixture.
Place the meat in the oven, pour the olive oil on top. Cook for about an hour.
Remove the meat from the oven, place in a saucepan, pour wine and cook for 20 minutes, constantly pouring the loin.
