Chop the onions and fry them in olive oil or vegetable oil. In Thailand, they cut the onions in a boat or larger, but I chopped them in half rings and thinly (it's more convenient for me) You can choose for yourself, as you like

Grate carrots on a coarse grater and add them to the onions and fry. I chopped one potato at the request of my husband. But at this stage, you can add pieces of chicken fillet or shrimp (as they often do in Asia) or add nothing.

Mushrooms (I took oyster mushrooms) boiled in salted water, cut into cubes and add to the fried onions and carrots. Stir, add spices (I took a ready-made set of hops and suneli) cloves chop garlic (you can squeeze through a press). At this stage we add hot paprika, cut it into pieces and add to the dish. Stir and stew everything for about 5 minutes.

Add pre-boiled rice to the stewed mushrooms. Mix.

Add the herbs. Turn the heat down to low. Stir to combine. Let soak for about 2 minutes. Salt and pepper to taste.

That's all. In Thailand, this dish is prepared in different ways, like our borscht. You can change, add different ingredients. For example, if you add more rice, you get a kind of a la Thai pilaf. In Thailand, they often add a little egg to the soup and mix it up. They also change the taste by adding shrimp or pieces of fish to the dish. This is how simply leaving the main ingredients, mushrooms and rice, can completely change the taste of the dish.
