Preheat the oven to 175 degrees C. Cut off the tops of the garlic so that the core is visible. Place the garlic on a baking sheet and drizzle with olive oil. Bake for about 30 minutes.
Cut a loaf of bread in half horizontally and place the cut side up on a baking sheet.
Remove the garlic from the peel, crush and mix with butter, parsley and cheese.
Lubricate the resulting mass of bread and put in the oven for 5 minutes.
