In the bowl of the mixer, mix the flour with yeast for a minute. Add water, olive oil, sugar and salt, continuing to knead and knead for 10 minutes. The dough should be soft, elastic and comfortable to use.
Cover the bowl with cling film and leave to rise until the dough doubles in volume.
Preheat oven to 190 degrees. Divide the dough into 15 parts. Form balls, and in each ball put an olive and a cube of cheese.
Re-shape the ball and put it in the shape with removable sides. Allow to rise for 15 minutes so that the balls stick together.
Grease a pizza sauce and sprinkle with grated cheese.
Bake for 35 minutes until the dough is ready and the cheese is golden brown.
