Rinse the lemon well and rub the zest.
Beat eggs with sugar, salt and vanilla until the mass becomes slightly lighter.
Wipe the cottage cheese through the full. Add starch, cottage cheese and lemon zest to the eggs.
Mix until smooth, transfer the dough onto a baking sheet covered with parchment, the dough should not be too thick, shape 25x35. Bake at 180 degrees for about 40 minutes.
Sprinkle the cake with icing sugar and cut into pieces.
Fiadone is essentially a cottage cheese casserole with a citrus flavor, it is very tender and just melts in your mouth. In the original recipe, instead of cottage cheese, ricotta is used, but if you replace it with fat cottage cheese, you will not lose this wonderful taste. Such a curd cake is perfect for the whole family for tea drinking or a light snack. Optionally add some raisins or slices of citrus.
