Cut eggplant into strips.
Finely chop hot pepper, onion and garlic. Mix and add ground ginger.
Fry the eggplants in vegetable oil in small portions, it will be enough to fry 5 minutes per serving.
After the eggplants, put the pepper with onions and garlic in the pan, cook for about 2 minutes, then add all the eggplants, mix everything well and add soy sauce, lemon juice and sugar.
Cook the eggplant for another minute. Serve hot and cold.
