Wash the eggplants and bake them in the oven until tender. Peel. Cut into cubes.

Scald the tomatoes with boiling water. Peel them. Dice them too. Pepper and onion as well.

Finely chop the greens. You can add garlic to taste. Separately in a bowl mix oil, vinegar, salt and sugar. Mix and season. Put it in the fridge. This snack is much tastier when cold)
