Wash the eel, remove the skin and cut into pieces.
Finely chop onion, pepper and garlic. Heat vegetable oil directly in a pan with a thick bottom, add pepper, garlic and onions, simmer for 5 minutes.
Add eel to the pot, add water and wine, add tomato paste, a bunch of greens, salt and pepper to taste. Cook for 35 minutes over low heat.
When the soup is cooked, remove the greens.
Pour into plates and serve.
Soup with eel is quite hearty, tasty, bright and fresh. Cooking is very simple and fairly quick, if you wish, you can add potatoes if you want, but even without it, the soup is quite substantial.
