Rinse the hearts well and cut off all the vessels and fat.
In a well-heated frying pan with a small amount of oil, fry the hearts over high heat until golden brown.
Pour in water, soy sauce and rice vinegar. Simmer all 15 minutes over low heat, then add pepper, garlic minced, chili and ginger, cook another 5 minutes.
Try it if necessary, add spices and salt, remove from heat, add chopped parsley. Let stand for 10 minutes before serving.
