Cooking
1 . Stage
Pour 1.5 tsp. gelatin over 3 tbsp. of cream and leave for 10 minutes. Cut the vanilla pod in half lengthwise and scrape out the seeds. Put the remaining cream, 50 g sugar and vanilla seeds in a saucepan and heat, but do not boil.

2 . Stage
Pour the hot cream into the gelatin and stir. The gelatin should dissolve completely. Strain the mixture through a sieve. Put the silicone mold on the tray. Fill the mold halfway with the cream mixture. Leave it to cool and set in fridge for 2 hours. The jelly should set almost completely.

3 . Stage
Set aside 200 g strawberries. Cut the rest into small cubes.

4 . Stage
Put the strawberries in a saucepan, add 250 ml water, lemon juice and the remaining sugar. Bring to the boil, remove from the heat and leave for 10 minutes under a lid.

5 . Stage
At this time, soak the remaining gelatin in 3 tablespoons of water and leave to swell for 10 minutes. Add the gelatin to the saucepan with the strawberries and stir until completely dissolved. Strain through a sieve and cool completely. Pour the cold mixture into the creamy jelly mould and leave in the refrigerator for at least 2 hours.

6 . Stage
Remove the jelly mold from the refrigerator 10 minutes before serving. Gently invert onto a plate. Slice the remaining strawberries and garnish with the jelly.
