Add the diced butter and cottage cheese to the flour. Chop quickly with a knife until crumbs are formed.
Add the yolk and knead the dough. Roll the dough into a ball and wrap it in a film to send it to rest in the refrigerator for 40 minutes
Roll out the dough on a powdered surface into a rectangle and cut it into triangles.
Sprinkle triangles with sugar and cinnamon. wrap bagels.
Place bagels on a baking sheet and put in the freezer for 25-30 minutes.
Bake at 200 C for 30 minutes.
