Cut the cucumbers in half but not completely.
Sprinkle each cucumber with salt and let stand for 40 minutes. After each cucumber, squeeze a little to remove excess salt, no need to rinse.
Chop the vegetable oil in a pan and add the hot pepper sliced in the rings, hold for a few seconds and immediately pour on the cucumbers.
Add soy sauce and mix.
Dissolve the salt in water and add vinegar, then put cucumbers in the marinade and leave to marinate for 24 hours at room temperature.
Store finished cucumbers in the refrigerator.
