Heat vegetable oil directly in a pan with a thick bottom, add chopped carrots and onions, fry for several minutes until the onions are transparent.
Then add chopped potatoes and mushrooms, fry for a few more minutes.
Cut the zucchini into slices and send it to the pan to the rest of the vegetables and cook for a few more minutes.
Pour the vegetables with water, cook after boiling over low heat for about 20-30 minutes.
Add salt and pepper to taste, add herbs and cook for another 5 minutes. Then remove from heat and beat until smooth with a hand blender. Pour the cream into the soup, put it on the fire again and cook for another 5 minutes after boiling again.
Puree soup is ready, serve with croutons or crackers garnishing with a sprig of greens.
