1 . Stage
Brew very strong coffee from 50 g of coffee and 350 ml of water and cool it. It should turn out 300 ml of coffee. In the cooled coffee, add rum, cognac or almond liquor.

Add sugar to the yolks and beat them in a water bath until they are light and thick. Then remove and continue whisking until the mixture cools down. Everything should take 7 minutes.

Mash the mascarpone and add the yolks to it - mix until smooth.

Whip very cold fat cream with powdered sugar until a thick, stable consistency is obtained. Carefully combine the cream with the yolk-cheese mixture, stir from the bottom up - gently mix until a homogeneous consistency.
5 . Stage
In a suitable mold with a height of 10 cm, put a layer of cream 2 cm thick. Savoyardi cookies quickly dip the cold in coffee on both sides and put in a mold on the cream.
6 . Stage
Put another third of the cream on the cookies, then once again lay a layer of soaked biscuits. Cover them with the remaining cream, smooth and sprinkle thickly with cocoa powder.
7 . Stage
Put tiramisu in the refrigerator for 5 hours, so that everything is well saturated. Serve chilled.
