Put chocolate, butter, salt in a pan and add water.
Put on fire and bring to a boil. Add flour and mix quickly so that there are no lumps.
When the dough is brewed it starts to move away from the walls, then remove the pan from the heat. We start adding eggs one at a time, after each kneading the dough well.
Using a pastry bag, put the dough on a parchment covered with parchment. Bake chocolate eclairs in a preheated oven to 200 degrees for about 25 minutes. Try not to open the oven for the first 15 minutes so that the dough fits properly.
Whip cream with sugar for the filling. Fill eclairs with filling using a pastry bag.
Chocolate eclairs are ready to cover with melted white chocolate and can be served.
