Cut the chicken into pieces, fill with water to completely cover, add the chopped carrots, parsley root and onion. Simmer for about 1.5 hours. At the end of cooking, add chopped parsley.
Beat eggs for noodles and mix with water and salt. Add flour a little, knead the dough. Roll it in a thin layer, sprinkle it well with flour, twist it with a roll and cut into thin strips. Shake the flour.
Boil homemade noodles in salted water until tender.
