Dissolve the salt in milk and pour meat on it. Leave on for 2 hours.
Dry the fillet with paper towels and tightly tie with culinary thread. Preheat the oven to 220 degrees.
Cook the marinade. Mix in a separate container olive oil, honey, soy sauce, lemon juice, nutmeg, paprika and garlic, passed through a press. Coat the chicken fillet with marinade and leave to marinate for 15 minutes.
