Melt the butter in a saucepan. Add flour, stirring constantly.
Pour in the milk slowly while continuing to stir the mixture.
Cut the cheese into small pieces. Add to pan and stir until it melts.
Remove the pan from the heat, add the egg yolks to the mixture and mix well.
Beat egg whites in a steep foam.
Add proteins to the cheese mixture. Mix gently and smoothly until smooth.
Grease the forms with butter and sprinkle with flour. Pour in the cheese mixture.
Bake cheese souffle for 25 minutes in an oven preheated to 180 degrees.
