Melt in a pan over low heat 30 gr. butter, then add flour and stir constantly for 30 seconds. Remove from heat.
Heat the milk and broth a little so that they are at the same temperature as the flour mass. In a thin stream, first start pouring milk into the pan while constantly stirring. When you add all the liquid, return the pan to the fire without stopping interfering.
Bring the sauce to a boil and cook for about 3 minutes so that it thickens a little. Then add the grated cheese and cook for a few more minutes, salt and pepper to taste.
At the end, add the rest of the butter, mix and serve with pasta or other dishes.
